To create multiple neutrals, right click on more than one point in the image, and use the "Set Neutral" menu item to create more than one neutral. The multiple neutrals are only useful in RGB and wgCMYK mode, and you should be careful that the neutrals are reasonably well spaced from each other on the curve. In Lab mode, the last neutral that you click on will be used as the neutral for the entire image. HSB does not support neutrals at all, since there is no ability to change a particular color to a neutral in HSB.
