Oops, I never posted my stuff on this example. I was looking at the video solution. Mike said that only RGB can have multiple neutrals. CMYK does too.
I did this example in CMYK.

That is because the K channel relates to Ink on Paper not brightness on the monitor. the true blacks hit the wall faster because you have CMY added to the K channel to make up the Blacks. In Lab you are dealing with actual L values and not a calculated value for ink on paper...
The GCR setting has the greatest effect on the K channel; try different GCR settings to see if you can find the right one for adjusting the Blacks more smoothly.
