I found another photo that I felt provided a better opportunity for both contrast and color correction.  This is a photo of chocolate covered peppers taken at the West Side Market in Cleveland.  I set the shadow and highlight points using thresholds, applied an s curve and set the neutral point on the front right corner of the tray.  Also in Lab mode.

Such a nice improvement...I love the greens...very nice...
