Mike, there are instances when manipulating the curve that it changes from black to red. Can you explain what is transpiring?

Joe,
That is "Curve Guard" telling you that the curve is "un-real"  It means you are creating colors that cannot be produced by conventional means.  It is a visual warning that you have asked too much of your curve.

In general you will see that you have to click on the control point again after that happens to get control of the point again and move it back to a place where it is not red.
