This is one of the more interesting images we have in the class. Taking your image as posted....
The correction requires that we tackle multiple color casts. This means that LAB is not the best space for the correction. I used RGB so that I could set multiple neutrals and try to remove the color cast. First thing I did was look for a neutral. I chose the light fixture near the top since the case was green and most likely should be White/ off White.
This is a memory color for me and I try to use that when I can. memory colors are objects that have a color you can guess with reasonable success and can trust to be pretty consistent.
I then set the hue clock on the neon tube. This is also a memory color but It can vary greatly so I just wanted to make sure it was not going crazy when I set the second neutral. I set the secong neutral in an area that was in a different brightness range than the light so that I did not effect the previous neutral setting too much. I shopped this neutral around a bit to make sure that it was making the change I wanted..."Killing off the Magenta without making the rest of the image look too odd."
Once I had the neutrals I wanted to make the neon look better so I adjusted the red curve just a bit since the R was out of place by a much greater range. I almost moved the B and G instead but decided that the simple path was better.
I applied the changes and re-opened the image in CM to check on the Skin tones of the person in the background and to verify that the yellow fruit was not blown too far out. I made a small adjustment to the blue channel to bring the yellow frit highlight into a less blown out color. Everything else checked out so I stopped there..

I did not pin the skin. I just set a hue clock to make sure the person was not getting knocked off hue by the other adjustments. That is one of the biggest problems with LAB and color it can be very addicting. You have discovered the problem...saturation without blowing out the details...It looks like you went too far though...set a few hue clocks and will see there is a strong red cast going on...

I used two passes of PS shadow/hilight to create the effect of fill lighting behind the counter and multiple neutrals on the steel frame(RGB).As compressed and transmitted the colors look better than in my working image.At least you can read the price list.GregM
