I have placed pins for both skin tone and a neutral.
In your instructions, I don't understand: Then click the unlock button at the bottom right corner of the sample palette, and alt click on the forearm, and the light and dark areas of the branch to create two more points.
What you mean by the unlock button? What types of points are you referring to?

On the Hue clock display there is a little "push pin" icon in the lower right corner...if you click the icon it unlocks the pin so you can make additional adjustments to the image and then you can re-lock the pin. It is sometimes useful but not always...

In general...Monkey fur is not Gray in the true sense..I would avoid hair as a neutral unless I knew it was neutral...
most hair is some shade of Brown or Red.
When you use a skin pin it is almost always after a solid color correction..
The skin pin should not be used to set the color of the overall image rather it is the cherry on top.
